Abiblo Health - Acetylated Monoglyceride
Acetylated monoglyceride is an emulsifier with sharp melting point. It has stability to oxidative rancidity. Acetylated monoglyceride is produced by inter esterification of fats with triacetin / glyceryl triacetate or by acetylation of monoacylglycerols with acetic anhydride.
