Baking powder is a leavening agent for pastry and bread. When baking powder is moistened, it leads to the production of carbon dioxide to lightened and areate dough. There are may types of baking powder which consists of acidic and alkaline material. Double acting baking powder, the chemical reaction occurs twice, first in the moisturing phase and second when heated.
