Ballotine or ballottine is a large piece of meat mostly poultry and sometimes fish which is popular in French. It is boned, stuffed, shaped, rolled, roasted or braised. Ballotine maybe served cold and hot and confused with Galantine. Galantine is poached and served cold with its own jelly.
